Two Favorites

I know this is kind of a strange post, but I’m going to share my two favorite recipes. If you have a bread machine and like wheat bread, this first one is a must try. It is a GREAT wheat bread.

Whole Wheat Honey Bread
1 1/8 cups water
3 cups whole wheat flour
1 ½ teaspoons salt
1/3 cup honey
1 tablespoon dry milk powder
1 ½ tablespoons shortening
1 ½ teaspoons active dry yeast

Place ingredients in bread machine in order suggested by the manufacturer. Select Whole Wheat setting and press start. (Makes 2 lb. loaf.)


This next one is called Baked Oatmeal. It is meant to be a breakfast and is so yummy. After it comes out of the oven I like to put natural, unsweetened applesauce on it. My girls and Bryan prefer powdered sugar. I've baked it with a couple cups of frozen berries added in (it needs a little longer in the oven with added frozen berries) and that is good. I think it would make a yummy dessert like this, just add vanilla ice cream or whipped cream on the side while it is hot. I keep meaning to put a layer of peaches underneath too, but haven't yet. This one is obviously very versatile! A quick note, I have made it with half the sugar and it turns out just fine. Also, I have never put a full 1/3 cup of butter, I always reduce this amount too! Oh ya, I've used pumpkin pie spice instead of cinnamon when I didn't have any, it was great.


Baked Oatmeal
3 C. quick rolled oats
1 C. packed brown sugar
2 t. baking powder
1 t. ground cinnamon
1 t. salt
1 C. milk
1/3 C. melted butter
2 eggs, beaten

Mix all ingredients together and pour into a buttered 9x9 baking pan. Bake at 350 degrees for 35-40 minutes. Serve warm with milk or applesauce. For variety, swirl in jam, peanut butter or flavored syrup. Chop dried fruit or nuts add a nice texture.

So there they are. My two favorite recipes. My favorites are always changing, but these two always remain at the top of the changing list. If you try them let me know what you think. I'd be curious to see if others love them the way I do!

I'm definitely goin to try the Baked Oatmeal. I've heard of it but never had a recipe for it. Thanks! I'll let you know what we think!

Oooh, yum. I think you gave me the bread recipe before, but I haven't used my bread machine in so long... I would like to try it because I've come across so few wheat bread recipes that do not take any white flour. Thanks!

Wow. I was just thinking about your wheat bread recipe the other day and how I needed to get it from you again because I wouldn't know where to find it at this point. Just brought home our bread machine and wheat flour from the warehouse last night and was going to call you today! I still may call you anyway!! Thanks for posting... perfect timing!

April! This is Carrie's friend Jennifer. I love your blog. Your girls are growing up so fast. I remember the day that Carrie and I came over to see Emian right after she was born. Crazy how time flies. I am glad to see that all is well for you and your family.
